Baked Rabbit (aka Healthy "Fried" Rabbit)

My family loved this recipe.  So simple!

2 - 3 lb young (fryer) rabbit, divided into serving pieces

2 Tbs. butter, melted

1 1/2 cups seasoned bread crumbs

1 tsp salt

pepper (optional)

chopped parsley

Preheat oven to 350 degrees.  Melt butter in bowl and set aside.  Combine bread crumbs, salt, pepper, and parsley in another bowl.  Dip rabbit pieces in butter to moisten then roll in seasoned bread crumb mixture to coat.  Place pieces in baking dish or in large cast iron skillet.  Do not crowd.  Cover with aluminum foil or lid and bake for 1 hour.

Alternative: Replace melted butter with fat free sour cream.  Yummy!
